something (obviously) carribean, maybe a little spicy and sweet
well… I went the easy way out. normal jerk chicken, and just grilled the pineapple, served w/ red beans and rice, and beer
Next time try serving a mango or grilled pineapple relish atop the chicken.
Diced Mango/pineapple
Diced red onion
Diced Jalapeno/Habenero (remove seeds)
Chopped fresh cilantro
Juice of 1 lime.
