laminate flooring install

It’s up to you. That is the answer.

I would go no glue. That is my advice.
normally I’d go with no glue as well, but I’m laying it down in the kitchen. So there is a chance that it may get wet, and water might make it way through the cracks.
No glue. You will want to rip it out in the future. Make it easier on yourself.
Glue is not a sealant. It will not prevent water intrusion. Choose a product which is rated for installation in a kitchen, and try to avoid bathing large dogs in the midst.

I wouldn’t do laminate in a kitchen. It is still unsealed wood and you will just be asking for problems if you install it there. Find some tile, they have some real nice self stick ones that you can get for about $1 sqft. Easy to replace single tiles and easy to clean.
