i’ve been looking for a good recipe for months…
for spicy chicken and rice, low/no veggies/mushrooms, etc.
please please help! i prefer if the rice is fried, or plain.
mexican, chinese, japanese, korean, whatever it is… i need it. i prefer a good spicy-ness, rather than a tabasco type spice.
i made kung pao chicken -nuts, spicy chicken fajita meat w/rice, and some other things… nothing was perfect though.
boil your chicken- i use breast, boneless skinless- the amount you use depends on how meaty you like them.. I usually use at least a lb and a half-let cool and shred. add one can chopped green chiles and your favorite spanish rice (prepared and cooled) and one package of chi chi’s mexican seasoning in a deep skillet. cube up one package of cream cheese and stir into skillet untill all is well blended. Dip flour tortillas into a mild (or hot if you prefer) verde (green) enchilada sauce, fill with chicken mixture, top with a shredded pepper jack (or whatever you prefer) cheese, roll up and place seam side down into a 9 by 13 baking dish. when pan is full, cover with remaining verde, smother with more shredded cheese, and bake in a 350 oven till hot and bubbly, about 30 to 45 minutes. I like the cheese very bubbly and brown, so you might cover with foil for the first half hour or so if you don’t want your cheese so brown. great stuff!
