but, put it in half of a pineapple, put in oven, and see how it goes.

I cut open a pineapple and put the salmon inside the crevice – cutting some chunks to place on top, bottom and in all the little nooks- then covered in tupolo honey. We’ll see how it goes.
I had two filets of salmon so I went ahead with the extra pineapple slices and put one piece of salmon in tinfoil surrounded with honey, pineapple and olive oil to see which might taste/cook better

hmm, so I think it might be something worth while, but it needs improvements.
I have packed away all my spices/pans and that is why I had this plan.
Final verdict – good. Not as great as I would’ve wanted it, but it’s good. There is a lot of juice in the bottom that makes it really good, but the salmon isn’t the best – probably because it’s been frozen for two days in my freezer
The pineapple is AWESOME when the sugars get carmalized (burned) so that is a good judge of when it’s finished cooking. I cooked with skins on if that means anything to anybody

on having reheated my other salmon drenched in olive oil/honey and pineapple chunks wrapped in tinfoil I deffinately think that you need to wrap the pineapple in tinfoil to maximize the taste – and addd some olive oil I guess. The taste of this one is better and those are the only two changes.
Also I’d reccomend a simple marinade, soy sauce and the honey would do, puts on a quick cure for firmer texture and better flavor, and if you pat the salmon dry afterward some of the moisture will have been drawn out so the fish will not be soggy. Personally, I’d throw some chives and a couple rough chopped cloves of garlic, along with maybe some grated ginger while cooking. That way you have a pan-Asian/Hawaiian flare to be proud of. Pass the yuckafluck!
