How to apply wall texture?

I got a hopper gun, air compressor and mud that I am mixing with water. The walls are finnaly ready for the texture to go on. Some of the walls have a slight knockdown texture the others have pretty much nothing.

I was planning on going with a knockdown texture but now think orange peel would look better. I am doing the ceiling and walls. What texture is modern and most popular in new constructions?

Finnaly I diluted the mud, poured in the hopper and shot away, varrying between 25-30 psi. What came out was nothing like orange peel or knockdown (after knocking down).

What should I be doing?

well what did it look like? Did you wait long enough before knocking down? Are you using the right tip? Most guns come with different tips, off memory i think i used the second smallest one that was about 3/16 hole. Psi was at 27.
Not to sound like a smartass, but what you should be doing is practicing on a sheet of drywall propped up against a tree, and getting your dilution ratio, spray pressure, and orifice figured out to deliver a surface finish that you like, and can then duplicate consistently in your home.
