i should’ve specified that i don’t have a smoker. i was thinking of slow roasting in the oven (tented with some kind of fluid/marinade.)
search for threads I created – Robin made one the other day and it was EPIC (and no smoker)
in the oven, what you could do is do standard dry-rub on the brisket (garlic, onion powder, paprika, celery salt, salt, pepper, whatever…)

then place the rib on a wire rack over a medium baking/roasting pan, fill the pan with some water for moisture, (maybe add some liquid smoke to it) then roast at very low temp

i was thinking some apple juice with a touch of liquid smoke. the one time that i tented a smaller cut in the pan sitting directly in the juice it came out
Had to dig this one out of my secret stash of recipes… it’s the very best oven roasted brisket I’ve ever eaten.

1 brisket
1/2 teaspoon each:
allspice
chili powder
garlic powder
onion powder
smoked paprika
season salt
sugar

1/4 teaspoon black pepper
1/2 cup cola
1/3 cup worcestershire sauce
1/2 cup cider vinegar
1/2 cup melted butter
1/3 cup soy sauce
3/4 cup BBQ sauce (hickory flavored)

Combine dry ingredients and set aside. Place brisket in a shallow dish, or better yet a heavy duty resealable plastic bag. Combine cola and worcestershire sauce; pour over meat and refrigerate overnight.
Drain meat, discard marinade. Rub the seasoning mix over the meat, and put into a roasting pan. Combine vinegar, butter and soy sauce; pour over meat. Cover and bake at 325F for 2 hours, basting occasionally.
Drain off cooking liquid, cover meat with BBQ sauce. Cover and return to oven for another hour, or until the meat is tender.
Remove brisket from pan, let stand at least 15 minuted before carving.
the last time I got a whole brisket, I cut it in half and corned it in 2 ziplock bags in the fridge for 12 days. 12 days later, i had the best corned beef I have ever eaten. I thought it would be hard but it was super simple and most items I already had
i’m glad to see i’m not the only person that uses coke as a marinade component.

i swear by everything she makes

I LOVE reading her blog!
it’s not that hard to make a smoker,

the smoker described in this episode can be had for about 50 bucks and it is good for not only for making pulled pork
