EDU (Cooking): Spicy Chicken Rice Bake

Makes: 6 servings

2 1/2 - 3 pounds of chicken breast (you can use thighs or drumsticks too if you want)
1/2 cup chopped onion (1 medium onion)
1/2 cup chopped green sweet pepper (1 pepper)
2 cloves garlic, minced
1 tablespoon cooking oil
15oz can black beans, rinsed and drained
14 1/2oz can diced tomatoes, undrained
1 cup tomato juice
1 cup frozen whole kernel corn

2/3 cup uncooked long grain rice
1 teaspoon chili powder
1/8 to 1/4 teaspoon ground red pepper (depending on how spicy you like things)
Paprika

Rinse off the chicken and set it aside (I had 5 large chicken breasts but 6 works better as the portions are more manageable)

Chop your green pepper.

Chop the onion.

Mince the garlic.

Throw the green pepper, onion, garlic, and cooking oil in a large sauce pan and cook til tender.

Throw everything else in there (except the chicken), stir it good to mix everything around, and bring it to a boil.

Once the mixture has been brought to a boil, pour it into a 3 quart rectangular baking dish. Then arrange the chicken breasts on top of the mixture and sprinkle with paprika.

Cover it with aluminum foil and throw it in the oven on 375? for 45-50 minutes til the chicken is no longer pink in the center. When the oven dings, something like this should come out.

Eat some, share some with your SO (make them do the dishes since you cooked ), then throw the rest in single serving zipper bags and toss them in the freezer. Makes a great dinner reheated when you’re too lazy to cook.
where did you get timtams? my brother brought some back from australia and i havent been able to find any in the states.
