EDU (Cooking): Easy Chili
I like my chili bean free (or low in bean content). Add some beans if you please. You can also add diced tomatoes if you like.
Ingredients
1 green pepper
1 red pepper
1 onion
1 anaheim pepper
1 12oz can of tomato paste
1 package of Carroll Shelby’s Chili
2lbs ground beef
Chop up all the veggies and throw them in a lightly oiled pan to get them saut?ed and soft.
Throw them in another pot (I used a crock pot but a big stove pot works just as well).
Brown the beef and drain off any fat.
Toss in the beef.
Add the can of tomato paste along with 2 empty cans worth of water.
Toss in the stuff from the chili mix. I don’t use the flour because it’s already thick enough. I also don’t add much of the salt. I do add more of my own chili powder and a little more cayenne pepper.
Mix it all up and simmer for 15-45 minutes uncovered.
Eat the chicken stir-fry you made the night before instead. Then bag up the chili in single serving bags and freeze it. Great for a quick meal that tastes great.
You could season it with a bunch of chili powder until you think it’s good, add some salt, and cayenne pepper I would guess.
Wow that looks like shit. Never attempt to make chili again.
Caroll Shelby’s is the SHIT. That’s all we use if we can. McCormick’s seasoning has NOTHING on that shit. I’m not even going to start the beans/no beans argument, though.
