Easiest/Fastest Recipes

I need some help. What are some of the fastest and easiest things you cook? I am always busy and never have time to cook a full normal meal, but I need ideas on anything that is extremely fast and easy.
Baked chicken breasts don’t take very long. Get that in the oven with some veggies on the stove and your eating in about 30 minutes.


Yea, I always make alot of pastas. Was just looking for something ‘different’ that is also really quick to make.
Here are a few quick 15 – 20 minute recipes. These are my own recipes and I’m share ssoo…. enjoy!

Simple Salads

Ham
Egg (1 or 2)
Spring Mix/Mesculan Mix, whatever type of salad you want to eat
Shredded Cheese

Boil a pot of water.
While you wait for the water to boil, take out the ham and start dicing it into 1/4" cubes.
When the water is boiling, place one egg in the water and cover it. Make sure no steam is coming out.
Prep your salad (rinsing if you need too and drying them).
Place in bowl, put ham and cheese in with it.
After about 7-8 minutes of the egg in the hot water, strain, run under colder water while you’re peeling and dice them up.
Put your own vinaigrette over it or salad dressing.

Make your own Vinaigrette
Make your own vinaigrette by taking :
1/3 Vinager of your choice (Raspberry, Apple, balsamic),
2/3 of Olive oil
Fresh or dried herbs
Salt and Pepper
Powder Sugar/regular sugar

If you don’t have a blender, just chop up the herbs and place them in the mixture and whisk. You can add sugar to it (I add a bit of powder sugar to mine), to make it sweeter and it’ll balance out the acidity of the vinaigrette.

Notes

You can always make your own salads (like grilled chicken salad) if you just use the basic steps above.

Chicken Products!

Chicken Curry
Servings: 2 people

2 Chicken breasts, skinned, diced 1/2" cubes
1 can of Coconut Milk (They have coconut milk in a juice box form, and you just need one of those)
1 Lemon grass (whole)
1 can of Straw Mushrooms
1 can of Baby Corn (optional)
2 things of garlic
Salt and Pepper
1-2 cups of rice
Olive Oil
1 can of Curry paste
1 thing of Bamboo Shoots (optional)
2 cups of Chicken Broth

Strain the Mushrooms, baby corn, and bamboo shoots. If the straw mushrooms, and baby corn are large, cut them in half.
Place olive oil in a hot pan.
Place the garlic, curry paste, and lemon grass in and stir for about 3 minutes.
Afterwards, place the chicken breasts in and make sure it’s cooked.
Place the mushrooms, baby corn and bamboo in, and stir for about 5 minutes, and then add the chicken broth.
Let it simmer for about another 5-10 minutes
Shake up the coconut milk and open it. Pour in half of the coconut milk into the curry.
Let it simmer for 5 more minutes and then place over rice.

Making rice
Basically, how rice is made is 2:1. 1 cup of rice, 2 cups of water.
Boil water, place rice in, turn off heat, cover the pot and don’t let the steam out. Or if you want, you can always do minute rice, lol.

Notes
The great thing about this one is that left overs tastes the best!

Lemon Chicken and Tofu
Serving: 2

1 Lemon Grass
2 Chicken Breasts, cubed
4 Cups of chicken broth (or 1 small can)
1-2 of those packages of firm Tofu, 1" cubes
1 cup of Rice (optional)

Take a pot and put the chicken broth in.
Place chicken breasts, and lemon grass in the broth and let it simmer until the cubed chicken breasts are cooked.
Place the tofu and rice and let the rice cook in the simmering soup.
Salt and Pepper to taste
Serve.

Notes
Tofu tastes so much better when you allow it to soak up all the flavors!!

Parmesan Chicken with Pasta
Servings: 2

1 1/2 cups of panko bread crumbs
2 Chicken breasts, tenderized (make sure they’re evenly flat so they cook evenly)
2 Eggs, beaten
1/2 cup of shredded Parmesan cheese
1 tsp each of: Thyme, rosemary, oregano OR
1 Tblsp of Italian Seasoning
(And I’m sure you know how to make pasta so you can fill in this gap )

Mix the herbs and Panko bread crumbs together with the Parmesan cheese.
Pound the chicken breasts, so that they’re even. This is important because usually chicken breasts are uneven (one side thicker then the other) and without this, they won’t cook evenly on all sides.
Place the chicken breasts in the egg wash.
Pick the breasts up and let it drain from the egg wash then dip them into the bread crumbs.
Heat up a skillet and put olive oil in it and then place the chicken breasts in. Cook until golden brown, and serve on top of pasta.

Notes
You can also bake the breasts in a 375 degree oven! Mmmmhhhmmmm….

Lemony Chicken with Black Pepper
Servings: 2

2 Chicken breasts
2 tsp of Lemon & Pepper seasoning
Green beans
Carrots

You got it! Season the chicken breast with the seasonings
Cut the tip of the green beans, and slice the carrots and steam them.
You can bake or pan fry the chicken breasts.

5 minute stirfry including prep time
Get a package of ramen noodles.
Get some water boiling
boil the ramen noodles

Meanwhile, heat a big frying pan on high.
Put a couple cups of frozen vegetable medley of sorts into it(I used Trader Joe’s Vegetable Hodgepodge, it has broccoli, red bell peppers, baby corns, sliced mushrooms, water chestnuts, and onion slices)
Throw maybe a teaspoon or two of oil into the pan, as well as a sprinkling of sesame seeds if you have them

Once the ramen’s done cooking, pull just the noodles out and put them into the frying pan with the veggies (now is a good time to add bean sprouts if you have them on hand)
Add a little more oil, and let parts of the noodles get nice and crispy, and make sure the veggies are heated all the way through.

Dump into a bowl, and top with a little soy or teriyaki sauce

Where do you get lemon grass? Is it some type of spice?

And is that curry chicken pretty spicy?

You can get fresh lemon grass from any grocery store that offers an ‘Asian’ section. It should be in the fresh produce section. You can also get it in Asian stores as well.

The curry chicken is as spicy as you make it, that’s why my SO loves it so much. He doesn’t like spicy so I put a bit of curry paste in it first, and have it taste it and if he wants it a bit more spicy I add a little bit more.

You’re basically in control of the heat.
thanks for that lemon chicken recipe, it was great. I didn’t use tofu though, as im not a fan of it, but I did use alot of rice and asparigus (sp?) and it was really good with alot of spice to it and I added my special ‘kick’ that I add to almost everything

My SO doesn’t like Tofu either, but when I had him try some of my Mom’s tofu, he fell in love with it. I use freshly kilted chiken

And like I said, if you use tofu (firm at least), it’s best to let the tofu soak in the broth for about an hour or two. It becomes soft, and very very tasty. If you’re looking for recipes that take about half an hour I can do that for you too. Just let me know

Yeah, tofu isn’t really my cup of tea, half an hour recipes arn’t bad at all. Anything is much appreciated as I am cooking more and more often now, as I really enjoy it, so I am always looking for new recipes to try out because I hate the same thing all the time. Even if I cook the same thing twice, I try to use different spices and seasonings just to give it a different flavor.
